Our beef is aged 21 days. Most producers only age 14 days. Longer aging gives the meat an intense flavor that most head chefs love. The meat also becomes more tender. We wrap our meat in the old fashion way in white paper wrap. We use certified provincially inspected abattoirs to process our cattle and ducks.
